About the Recipe

Banana bread is one of the easiest and shortest things to make (considering) and it's also incredibly tasty! I always make this when there's a spare over-ripe banana that no one really wants to eat. The super sweetness of the banana really comes through in this recipe.

Super easy and good for beginners!

Ingredients

  • 1 over-ripe banana

  • 1 medium egg

  • 110g plain flour

  • 6g baking powder

  • 1tbsp milk

  • 50g unsalted butter (room temperature)

  • 86g granulated sugar

  • Roughly chopped semi-sweet chocolate bits (optional)

Equipment

  • 1 large bowl

  • 1 whisk or spatula

  • 12 cupcake moulds

Preparation

Step 1
Pre-heat the oven to 180 degrees Celsius.

Step 2
Peel the banana and mash it in a large bowl with a fork.
It's okay if you still have some small pieces!

Step 3
Add the rest of the ingredients in no particular order.
Note: no need to whisk the ingredients together with every addition. Just add them all in!
Tip: add the butter in small cubes

Step 4
Mix all the ingredients together with either a whisk or a spatula.
Tip: if the butter is still slightly hard, I'd use a spatula to mush everything together!

Step 5
Spoon your batter into the cupcake holders (one large spoonful per holder)!
Note: if you still have some battter left at the end, just portion them as equally as possible into all of the cupcakes.

Step 6
Place in the oven for 12-15 minutes until your toothpick comes our clean when poked and the top of the cupcake is golden brown.
Note: if you place your batter into a larger tin instead of smaller cupcakes, you may need to leave it in for longer!

Step 7
Let cool for at least 5 minutes. Serve and enjoy!

Meal Prep Factor

Can I keep...
1) the unbaked banana bread batter overnight?
YES! You can but I wouldn't recommend it unless you're meal prepping for the next day. You're almost there anyway! Make sure you keep it in the fridge and whisk it thoroughly before spooning it into the cupcake holders.
2) the baked banana bread overnight?
YES! You may keep the baked banana bread in an airtight container for 2-3 days at room temperature.
