About the Recipe
This miso salmon recipe is a must try... even if you may not be a huge fan of fish! This recipe can be quite sweet so be sure to adjust the brown sugar to your liking and make sure you use the right type of miso!
Best served with rice and a veg side dish.

Ingredients
2 salmon fillets
65g brown sugar (you can add up to 10g more if you prefer a sweeter miso salmon)
1.5 tbsp soy sauce
30ml water (hot)
1.5 tbsp brown/barley miso (you can also use white miso)

1 ziplock bag for marinading
Small bowl
Aluminium foil
Preparation
Step 1
Boil some water in a kettle or in a saucepan. Mix the brown sugar, soy sauce and miso together in a small bowl.
Step 2
Once the water has started to boil, let it cool for 10 seconds before adding 20ml of the water into the sugar, soy sauce, miso mixture. Mix well before adding the remaining 10ml of hot water.
The aim here is to dissolve the brown sugar and miso. Mix as well as you can and don't worry if there are still some small miso chunks.
Step 3
Place the salmon fillets into the ziplock bag and pour the marinade into the bag. Securely close the bag and make sure the salmon is entirely submerged in the marinade. Place in the fridge for at least 2 hours.
Tip: marinade the salmon and place it in the fridge in the morning in preparation for dinner.
Note: if your marinade is still too hot, make sure it cools down before you add it into the bag with the salmon!
Step 4
Prepare your oven tray by setting a sheet of alumnium foil over it. Take another sheet of alumnium foil and fold the sides so that it creates a little alumium dish for your salmon and the marinade sauce to sit in. Make sure the sides are raised high enough for the sauce to not drip out the sides or corners.
Step 5
Set your oven to broil.
Tip: if you don't have a broil option, pre-heat your oven to at least 250ºC (preferably 260ºC).
Step 6
Put the salmon in the oven for 15-20 minutes.
If you have set your oven to broil, you can place the salmon in the oven immediately. If you are pre-heating your oven then wait until it has reached the desired temperature before placing it in the oven.
Step 7
Let cool for at least 5 minutes. Serve and enjoy!

Can I keep...
1) the marinaded salmon overnight?
YES! You can but I wouldn't recommend keeping it in the fridge marinading for more than 24 hours.
2) the miso salmon overnight?
YES! You may keep the miso salmon in an airtight contrainer for 1-2 days in the fridge.
